2006, Dec 16 - Dec 31: Ambergris Caye, BELIZE

We're back from our 2 week vacation in Ambergris Caye, Belize. WOW!!! Before we left for Belize, Doug was pretty stressed from his job and wanted to get out of town. We decided to head back to Belize b/c we wanted a vacation and to visit some "wedding sites" (See our 1st Belize blog, Jan 2004). We've never ever took more than 1 week of from work but we decided to take 2 weeks off this time.

We stayed 1 week at Blue Reef Resort,
http://www.bluereefresort.com/ which was about 8 miles north from the main downtown of San Pedro. Blue Reef Resort was remote, quaint and extremely peaceful. Our balcony gave us an awesome view of the blue picturesque ocean. We spent our week snorkeling right out to the reef. Doug spearfished fresh snapper, lobsters, and conch! we brought with us our own food spices and cooked our own whole fish, fresh sushi, and fresh cerviche - YUM! Let's not forget we had mucho, mucho Belikin beers!

I ended up getting scuba certified for Open Water. AWESOME! I didn't realize I was going to do my 1st 2 ocean dives on my 1st day. As you all know, I get very sea sick... well I was very unprepared for the real waves so I did not have on the prescribed ear patch. Well, you guessed it, after coming up from a dive, my dive instructor said, "What did you think of the dive?" Doug excitingly replied, "GREAT!" and I responded by hurling the lunch we had that day - UGH! Soon after, we ended up doing 5 day dives and 1 night dive. If you've never night dive before... boy are you in for an experience! All the day creatures go to sleep and then all the night creatures wake up. We saw eels, spider crabs, parrotfish, octopus, illuminated planktons, etc! We ended up breathing in 2x the amount of oxygen, and flailing all over the place b/c we were afraid of touching anything!

Since we booked our trip late, we weren't able to stay at the nice remote resort for our 2nd week. So we found a place closer to San Pedro town at a place called Seven Seas Resort, www.sevenseasbelize.com. I only recommend staying at 7 Seas resort if: a) you're looking for a very cheap place to stay, b) you don't have kids, c) you plan on eating out every night. Other than that, the place is what you would call a Backpacker's hotel. Since we were closer to town, we did a lot of food sampling, more Belikin beer drinking, we hung out with more local people in the area. We did A LOT of walking during our vacation. Belize is by no means an insect-free country. We got bit by sandflies, chiggers, mosquitoes all week! Doug's feet got blistered by his flip flops (how???) and he forgot to wear bug repellent. If you zoom in on the picture, you'll notice he's got major bites on his foot, like chickenpox - YUCK!
Well, we're back home now in the cold wintery weather. We're excited for what Belize can offer to us for our wedding plans in 2008.
